Fresh Corn Salsa
1 ear fresh corn
1 medium zucchini
¼ red onion
1 ½ cups cherry tomatoes
1/3 cup rice wine vinegar
Cut corn kernels off the cobb. Chop the zucchini, onion and cherry tomatoes into small pieces. Add vinegar. Add salt and pepper to taste. Mix well, refrigerate for one hour. Serve cold or at room temperature.
